摘要

The goal of this research is to identify and quantify biologically active peptides with functional properties, for the prevention of age-related chronic diseases, in soy proteins. One of the main outcomes of this investigation has been the identification and mapping of bioactive peptides with health benefits in commercial protein products. Furthermore, we have established the presence of and quantified lunasin a peptide with anti-cancer properties, in various soybean genotypes, soy products and industrial down-streams. The results obtained in these studies will provide food processors with valuable information concerning product benefits, information on how to optimize the content of bioactive peptides and points of functional differentiation. At the same time, the consumer will have better availability and alternative options for consuming soy products that will benefit their health.
