Legume seed contains antinutritional factors (ANFs) such as lectins and trypsin inhibitors that may adversely affect their nutritional properties. However, processing easily inactivates them and chronic ingestion of residual levels is unlikely to poserisks to human health. On the other hand, recent research has shown potential beneficial effects of some of the ANFs. Among them, there is substantial evidence for a role of trypsin inhibitors, phytic acid, saponins and lectins as cancer risk reducing factors. A brief summary of some of these results is presented.
