Trypsin inhibitor SFTI-1 isolated from sunflower seeds [1] is the smallest naturally occurring plant peptidic serine proteinase inhibitor.Its head-to-tail cyclised structure is additionallystabilised by a C~3-C~11 disulfide bridge:The crystal structure of SFTI-1 in complex with bovine b-trypsin shows both sequence and conformational similarity to the trypsin reactive loop of Bowman-Birk family [2] of serine proteinase inhibitors (BBI).
