The aim of the study was to obtain natural extracts from beetroot for possible applications in bio-photonics and medicine. In this respect a series of comparative results are presented in relation to the main bio-active components of some selective natural extracts obtained from beetroot. Beta vulgaris (beetroot) is the main source for the natural red dye, the name of the obtained extracted being "beetroot red". In this paper, the efficiency of different alcoholic solutions used from betaine extraction from beetroot was studied. The control parameters were betaine concentration in the extracts and the stability of the obtained extracts.
