In this study, a new practical significant method of preparing flavonoid-rich juice from hawthorn (Crataegus pinnatifida) was established by cellulose hydrolysis and membrane filtration. Optimum conditions for enzymolysis were obtained with cellulose concentration of 1.25 g/L, hydrolysis temperature at 50 V, pH 3.5, and hydrolysis time for 120 min. After the hydrolysis, endocellular substances released were left for diffusing. Subsequent extraction was done at 70 °C for 90 min. The flavonoid content of hawthorn juke was above 1.83 g rut in equivalents / 100 mL juice. The optimal operation parameters for membrane filtration were at 20-25 °C with pressure from 0.10 MPa to 0.15 MPa and aperture size 0.02 /μm. The flavonoid content of hawthorn juice after membrane filtration rose to 4.03 g rut in equivalents / 100 mL juice.
