摘要

An essential precondition for the rational and economic production of top quality malt and beer is the consistent high quality of the raw materials used. An innovative method to measure the homogeneity of barley and malt is presented which utilises the NIR technology for a single kernel analysis. Unmodified regions of the malt endosperm were identified and quantified on the basis of their NIR spectral data. Calibration models for the prediction of the malt modification and interesting grain constituents were developed. The NIR single kernel analysis is conceived for the intake control of raw materials at breweries and malthouses.
