Situation and Progresses on Food Allergens

摘要

The food allergy or intolerance has become a major public health problem. In this paper, treatments of the food allergy, analytical methods for detection and characterization of food allergens, influence of processing on structure of food allergens, and effects of Maillard reaction on the allergenic proteins are summarized, and some suggestions for future research are given as well.
