Electronic tongue based on the array of 22 potentiometric chemical sensors with PCA and ANN data processing was applied to analysis and recognition of flesh food samples. Both fresh and seawater fish, pork and beef meat and liver were evaluated. The process of fish spoilage and, hence, fish quality can be monitored. Electronic tongue allows distinguishing between close samples of the same nature (meat or liver) from different animals. Moreover, animals with different temperament can be recognized by analyzing of composition of their liver. This could be of high value for selection of agricultural animals. The presence of drugs in pigs before slaughter can be detected, which is practically important, e.g. for diagnostic of diseases and quality control.
