In this study,water-soluble polysaccharides was obtained by hot-compressed water from Chinese quince.The effects of extraction on the yield of polysaccharides and solid residues were conducted.The results indicated that a moderate temperature 120 ℃ and an efficient time 45min are suitable for the preparation of polysaccharides.The polysaccharide was puried by DEAE-52 and three fractions(CSP-1,CSP-2,CSP-3)were isolated.The avage size of CSP-2,CSP-3 was 5.91×104 and 5.79×104 Da,respectively.CSP-1 was a polysaccharide polymer with two main peaks.Monosaccaride components analysised by HPAEC revealed that CSP-1 were mainly composed of arabinos,and CSP-2,CSP-3 were acidic polysaccharides.Spectral analysis(IR and UV)showed the similar structure between three fractions.Moephological analysis were determined by SEM.TG and DSC analysed the thermal stability.
