Propagation programs for peaches and nectarines have been targeted to select genotypes having taste attributes such as high sugar levels, well-balanced sugar/acid ratios and for kiwi fruits targeted to select interesting genotypes of Actinidia chinensis, chinensis. Some chemical parameters of peaches and nectarines of commercial and recently introduced cultivars with high and low-acid character were sutdied. Early-maturing genotypes of kiwi-fruits, were examined according to fruit size, sensorial attributes and higher levels of ascorbic acid than 'Hayward'. The analytical measurements of some soluble sugars, malic and ascorbic acids were carried out using innovative analytical procedures based on fast and selective devices which require very little or no sample treatment. These devices, based on amperomentric measurements, have a response time of 1-2 minutes, can be minaturised and constructed and used as disposable sensors. In this study glucose, fructose, malic and ascorbic acids were detected with specific probes and the results contributed to better understand and to improve the genetics of the fruit.
