A surveying and mapping method employing an unmanned aerial vehicle comprises: acquiring an operation requirement of a surveying and mapping operation (S220); determining a safe exposure parameter according to the operation requirement and an ambient light brightness level (S240); and controlling, according to the safe exposure parameter, an exposure parameter used for photographing to capture a target image required for surveying and mapping (S260). The invention enables correctly exposed target images to be captured at different ambient light brightness levels, and ensures that the captured target images meet the operation requirement of the surveying and mapping operation. The invention can adapt to scenarios in which ambient light changes abruptly. Moreover, appropriate exposure parameters meeting the surveying and mapping requirements can be automatically determined without requiring a user to perform manual calculation and setting, thereby greatly improving the efficiency of a surveying and mapping operation, and preventing the problem in which errors occur easily because of manual calculation.
