To provide a dehydrator which can sufficiently perform heating dehydration even by low temperature heating with use of waste heat or the like, and a dehydration method.SOLUTION: A dehydrator 8 comprises a jacket 51 for heating which is fitted to a part of an outer cylindrical screen 12 and has configuration for circulating a meat medium in the interior thereof, and the part of the outer cylindrical screen 12, to which the jacket 51 for heating is fitted, is so made as to be a heating surface. A temperature of the heat medium is 70°C or more and less than 90°C, and the jackets 51 for heating are arranged at intervals in an axial direction of a screw shaft 13, and the heating surfaces and filtration surfaces are alternately and repeatedly arranged plural times in the axial direction of the screw shaft 13. Heating dehydration, such that a dehydration object is heated by the heating surface in a transport process, whereby a viscosity thereof is reduced, and the dehydration object is filtered by the filtration surface in the state that water holding capacity thereof is reduced due to thermal denaturation, is repeated plural times.SELECTED DRAWING: Figure 1
