The present invention relates to a method for preparing clean-label starch by submerged UV irradiation treatment and to the clean-label starch prepared by the above method. Specifically, the present invention includes the steps of: a) preparing a raw starch dispersion; b) irradiating ultraviolet rays to the raw starch dispersion of step a); and c) recovering and drying the raw starch dispersion irradiated with ultraviolet rays. The clean label starch prepared by the method of the present invention can improve the solubility, swelling power, gelatinization properties, paste viscosity, acid resistance, heat resistance or shear resistance of raw starch by irradiating the raw starch dispersion with ultraviolet light using a submerged UV lamp. Therefore, it is possible to manufacture a starch material with improved physical functionality in an eco-friendly way, and has the effect of providing a new clean label starch material that can replace existing chemically modified starches.
