To provide a meat product superior in water retention, oil retention and binding property, and a manufacturing method of the meat product without depending on phosphate.SOLUTION: A meat product contains vegetable food fibers and fat-processed starch. A manufacturing method of the meat product includes a salt pickling step pickling raw materials of the meat product with salt, and a blending step blending vegetable food fibers and fat-processed starch to the raw materials after the salt pickling step.SELECTED DRAWING: Figure 1
