PROBLEM TO BE SOLVED: To provide a method for screening a sugar-degrading enzyme useful for assimilating a caramelized polymer, a method for screening bacteria for food additives, and a method for evaluating prebiotics. Provided is a primer pair capable of detecting a bacterium having a glycolytic enzyme useful for assimilation of a caramelized polymer. A glycolytic enzyme has one of the following amino acid sequences (a) to (d). (A) Amino acid sequence shown in SEQ ID NO: 1 (b) Amino acid sequence in which one or several amino acids are substituted, deleted, inserted or added in the amino acid sequence shown in SEQ ID NO: 1 (c) Amino acid sequence shown in SEQ ID NO: 2. (D) Amino acid sequence in which one or several amino acids are substituted, deleted, inserted or added in the amino acid sequence shown in SEQ ID NO: 2 [Selection diagram] FIG.
