To provide semi-fermented tea that makes it possible to produce semi-fermented tea having a different degree of fermentation through a simple production method in place of a production method of conventional semi-fermented tea, can easily control a speed and a degree of fermentation, has less astringency, has a dense color of water, has richness and a depth in taste, and has high flavor, and a production method thereof.SOLUTION: The present invention is a production method of semi-fermented tea including: a step of wilting tea green; a step of bruising, after wilting, on a tissue of all tea green containing front surface and rear surface or a total tissue cell by breaking, rubbing, depth blue or an arbitrary combination thereof; a step of making the tea green bruised everywhere ferment; a step of killing the tea green when the tea green reached to a target degree of fermentation in the step of fermentation; and a step of drying the killed tea green.SELECTED DRAWING: None
