Disclosed are a radio frequency heating control method and a radio frequency heating appliance. The method comprises: emitting electromagnetic waves of multiple frequencies to food to be heated; obtaining incident power and reflected power of electromagnetic waves of each frequency; calculating a difference between the incident power and the reflected power of the electromagnetic waves of each frequency; using the electromagnetic wave frequency corresponding to the maximum difference as the optimal frequency, and determining a cooking time Tm according to the optimal frequency; and heating said food with electromagnetic waves for a duration of Tm, emitting the electromagnetic waves of the optimal frequency within the duration of T1, and emitting electromagnetic waves of the remaining frequencies within a duration of T2, wherein T1+T2=Tm, and T1>T2. According to the present invention, by means of frequency sweeping, electromagnetic waves of different frequencies are emitted to food to be heated, the thickness of said food can be automatically recognized according to the difference between the incident power and the reflected power of the electromagnetic waves, and then an appropriate cooking time and an adjustment approach for the electromagnetic wave frequency within the cooking time are determined.
