March 8 Roots, peeling.-A peeling machine for fruit and vegetables comprises two revolving cylinders b, mounted on a perforated axis c, and provided externally with peeling- teeth which gradually shorten from one end of the cylinder to the other. Above the cylinders is mounted a series of receptacles on an endless chain, which receives a forward movement and reciprocating movement by suitable gearing m, n, o, the material in the receptacles being thus gradually carried over the revolving peeling cylinders. The sides h of the receptacles are provided with cutting-edges h1, and slides r1 regulate the size of the openings at the bottom of the receptacles. The material is fed in at p, and emerges at q, the cover of the casing being provided with a number of slides by which the duration of the peeling can be varied. Water, entering by the pipe f, passes from the perforated pipe c through the interstices between the bars composing the cylinders, and washes away the peelings.
