Powdered reconstitutable milk - containing mashed potatoes are made by mixing cooked and mashed potatoes with milk and mashed potato seed powder prepared from mashed potato only, as described in Specification 566,167, to give a friable powder of 35-50, preferably 35-45, per cent. moisture reducing to the desired degree of fineness, as by sieving, and drying to a moisture content not exceeding about 7 per cent. by weight. Alternatively, the powder may be dried and then reduced. Reducing and drying may be effected by the methods described in Specification 566,167 and may be carried out in more than one stage which may alternate with each other. The milk, as a 33 per cent. solution of milk solids, the latter preferably constituting about 10 per cent. of the mashed potato and seed powder on a dry basis, is obtained from evaporated separated milk or reconstituted from separated milk powder and is distributed uniformly as a fine spray in a mixer preferably of the Gardner type. The product should pass a 30 mesh sieve and the coarse residue may be reconstituted preferably with hot water and mixed in with further ingredients to make more friable powder. In an example, 25 lbs. cooked mashed potatoes containing about 80 per cent. moisture are mixed with 55 lbs. seed powder and a milk solution obtained by reconstituting 6 1/4 lbs. dried separated milk powder with 12 1/2 lbs. of water at 100-120 DEG F.
