To render whale meat suitable for human consumption, the raw whale meat is dried at a temperature insufficiently high to prevent, on rehydration, reconstitution of water-soluble protein originally present in the raw meat, and under such conditions that water-soluble tasty compounds are kept in the dried product, and fat is removed from the dried product by extraction with an organic solvent free from water, e.g. benzine of boiling range 40-70 DEG C. The drying may be aboard a floating factory and the extraction ashore. An example is concerned with drying finely cut whale meat at 100 DEG C. to 55 per cent water content in a horizontal, steam-jacketted cylinder provided with a stirrer, drying further to 6 per cent water content in tunnel, cabinet or conveyer drier, thereafter stirring the dried product with benzine and filtering, twice, and removing the last traces of benzine under vacuum.
