A process for the production of proteins and lipids separately from cellular vegetable material containing proteins and lipids comprises introducing the vegetable material suspended in an aqueous liquid carrier, present in a liquid to solid ratio of at least 2:1, into a hammer mill, allowing the material to remain in the mill for from two-thirds of a second to ten seconds, the mill being run at a tip speed of at least 4000 feet per minute, raising the pH of the liquid to dissolve the specifically activated proteins whereby, in the presence of the specifically activated lipids, combination will occur to form a protein-lipid complex, acidulating the liquid to the isoelectric point for the protein or sufficiently near to the said point to precipitate substantially completely the newly formed protein-lipid complex as described in the parent Specification, submitting the aqueous suspension of the complex thus obtained, after mechanical separation of water, to azeotropic distillation with a non polar solvent which may be immiscible with water and thereafter separating the proteins and lipids by solvent extraction. The dehydrated solids may be first washed by a non polar solvent to remove the bulk of the fatty material and are then extracted with a polar solvent to remove undesired fat soluble material. Non polar solvents specified are hexane, propane, toluene, xylene and any gasoline fraction. The polar solvent may be acetone or alcohol.
