In the production of tea from unwithered leaf, the freshly-plucked leaves are, after a preliminary washing or drying if necessary, conditioned before their fermentation or storage, the leaves being conveyed through water or sprayed with water at a temperature between 40 and 85 DEG F., according to the leaf temperature desired, and being then dried by centrifuging, by an air current or by suction to 1-2% moisture content.
