Low dextrose equiv. (DE) starch hydrolysates, useful in the prepn. of foodstuffs, as carrier for synthetic sweeteners, as flavour enhancers, as moisture holding agents and bulking agents, are prepd. by contacting a 10-65% solids slurry of starch with strong acid cation exchange resin pref. a sulfonated copolymeric resin derived from a divinyl-benzene-styrene copolymer for 5-180 mins at 100-125 degrees C under a pressure of 5-30 psig and recovering starch hydrolysate of DE 10-45, contg. less than 0.3% ash (dry weight).
