A foodstuff bar comprising a compacted mass of dehydrated non-pulverised foodstuff pieces, and optionally other solid ingredients such as seasonings and spices, individually enveloped in and bound together by films of a dried binder material, such as gelatin, agar, other proteins, saccharides or edible synthetic materials, are made by mixing the solid ingredients with not more than 25 wt. per cent. of an aqueous solution of the binder, moulding the mixture into bars, and drying the bars to the desired moisture content. Foodstuffs mentioned include dehydrated vegetables, meat, cereals, and bread. A preferred binder is a sweet soya sauce, with or without gelatin. On immersion in water, the bar disintegrates to reconstitute the foodstuff ingredients.
