Cocoa is processed into an instant cocoa extract, aqueous or powdery, and leached cocoa fragments for diet chocolate products. The broken cocoa beams are extracted in a counter-flow of water at 70-135 degrees C and is not 20 atm. to produce an aqs. extract which contains the greater part of the water sol. substances, originally contained in the broken beams. This extract is drawn off at one end of the bed; the leached fragments, free from water-sol. salts and alkaloids are discharged at the other end. The instant cocoa has excellent aroma; leached fragments produce diet chocolate of cocoa taste and colour but without salts, alkaloids or sugar.
