Animal and vegetable proteolysates prepn - for treatment of undernutrition

Proteolysates containing nearly all the original protein nitrogen in the form of easily assimilable acids, are prepd. by treating finely divided animal or vegetable protein source with 0.2-2% of a proteolytic enzyme or enzyme complex, eliminating fats by decantation at a low temperature, filtering and passing the filtrate through an ion exchange resin. The eluate is then concentrated and spray dried or lyophilised.
