A cutting and agitating device for a mass of curds in a large cheese vat, includes a rotor in the form of a cylindrical housing revolving on a vertical axis, carrying a satellite system with a vertical shaft on which one or two cutting assemblies are mounted; the drives of the rotor and of the satellite system being completely independent of each other. One variable speed motor drives the hollow shaft of the rotor and a second variable speed motor positioned inside the rotor housing, powdered via conductors from a revolving collector, drives the shaft of the satellite system. As a result of the completely independent motions of the shafts of the rotor and the cutters, it is possible to give the tools a path and a speed suitable for any cutting and agitating operation.
