An installation for continuously finish-boiling a sweet mass fed from a preheater to a series of hot plates one behind the other, and drawing off continuously from the finisher, has the hot plates arranged in a vessel and standing vertically one behind the other in the form of a battery in which each second plate is positioned some distance from the bottom of the vessel and projects above the upper edge of the adjacent plates. In front of the hot plate battery there is a filling shaft with a valve controlled by a float. Behind the battery there is a collecting zone separated by a dam over which the syrup flows, from a drain shaft leading to a drain tube.
