Agents for improving the baking quality of cereals contain at least one herbicide which inhibits photosynthesis. When applied in sublethal doses at the appropriate time, the herbicides increase the protein content and the baking quality (as measured by sedimentation, etc.) of oats, barley, rye and wheat, esp. Central European summer wheat, without excessive loss of yield. The prefd. herbicide is 1-(2-benzothiazolyl)-1,3-dimethylurea.
