1525665 Tartaric acid MITSUBISHI GAS CHEMICAL CO Inc 14 April 1976 [16 April 1975 15 Dec 1975 2 Feb 1976] 15312/76 Heading C2C [Also in Divisions C3 and C6] A process for producing L(+) tartaric acid or salts thereof comprises hydrolysing cis-epoxysuccinate with an enzyme cis-epoxysuccinate epoxyhydrolase (L(+)-tartrate forming) formed by culture of a microorganism which belongs to the genus Acetobacter or Corynebacterium and is capable of forming the enzyme. Preferably the enzyme is immobilized in the form of gelentrapped microorganism cells containing the enzyme, but the enzyme may be used as a culture both containing the enzyme, cells of the microorganism containing the enzyme, a dried preparation of microorganism cells containing the enzyme, or a purified enzyme-containing liquid preparation. The hydrolysis may be carried out at a pH of 7À5-8À5 and at 20-45‹ C. The enzyme may be produced either by culturing the microorganism in the presence of cisepoxysuccinate or by culturing the microorganism in the presence of D-, L-, DL- or neso-tartrate. The specific examples describe the preparation of L( +) tartaric acid, and its Na, Ca, methylamine, Ba, Zn, Fe, Al, K, Mg, triethylamine, ammonium salts using the specific enzymes produced from the specific microorganisms. Acetobacter curtus FERM-P 2879, 2880 or 2881 and Corynebacterium S-13 FERM-P 2891.
