The present invention relates to the treatment of protein hydrolysates in order to reduce the content of bitter substances. This process consists in bringing the hydrolyzate into contact with a solid woody adsorbent of vegetable origin, based on locust bean for example, then in collecting the de-bitter hydrolyzate after having separated it from the adsorbent.
