Method for protecting food additives and facilitating their use, in which they are fixed on or coated with ultrafiltered milk proteins, it being possible for the fixing (or the coating) to be effected simply by dissolution, dispersion or emulsion of the food additives in a solution of ultrafiltered milk proteins and drying of the solution, dispersion or emulsion obtained.
