ABSTRACT OF THE DISCLOSUREThe invention provides a process for producingpastry and flaky pastry-like products wherein the startingmixture in the form of a dough passes through a roller systemcomprising a series of rollers wherein each succeeding rollermoves faster than its preceding roller and the fleece-like filmdeveloped thereby is conducted to a variable speed conveyorbelt wherein the ratio of the speed of the belt to the speedof the last roller is adjusted such that the fleece-like filmassumes an undulating shape, the film therafter being dried.The temperature of the rollers is maintained at a predeterminedlevel as a result of circulating brine through the rollermechanisms.
