PURPOSE:To prepare a rapidly reconstitutible block instant food, by putting a block of cooked raw material in a vessel, pouring a specific amount of a binder in the vessel, and freeze-drying the content. CONSTITUTION:Cooked food raw material such as vegetables, fish and shellfish, meat, seaweeds, edible wild plants, etc. is put into a vessel having a definite volume. The amount of the material is selected to correspond to one meal of a liquid food such as MISO soup, Japanese soup, soup, noodles in soup, etc. A binder selected from gelatin, agar, pectin, MISO, egg, etc. is mixed with 20- 200pts. of water based on 100pts. of the binder, and if necessary, mixed with a seasoning additive. 20-50ml of the binder solution is added to the one meal of the food material, heat-treated if necessary, and freeze-dried by conventional process.
