New highly diastatic kiln-dried malt has diastatic energy at least 580 deg. WK (Windisch-Kolbach). A highly diastatic malt is prepd. by malting grains using a wet-dry steeping tank. The grains are first steeped, in the thinnest possible layer, in flat steeping tanks at 10-14 (12) deg.C. Steeping time comprises 1/4 wet- and 3/4 dry-steeping. The grains are strongly aerated while wet and strongly sucked off when dry. After steeping, the degree of steeping is 35-42 (38)% and the temp. is allowed to rise to 16-20(18) deg.C in 3 days, followed by cooling to 8-12 (10) deg.C in 4 days. Germination-stimulators are added during this time, and, towards the end of this period, also water to water-content 45-51 (48)%. The prod. is kept 4 days at this temp., at a constant water content of 45-51 (48)%, and then kiln-dried with a high air excess. The prod. is used as an animal feedstuff additive, e.g. for pigs and calves, and in starch saccharification, esp. for distilleries. Malt yields are good, reaching 65-70% in malting wheat. The high diastase content increases malt digestibility when used as feed additive.
