PURPOSE:To prepare a fish paste product resembling shrimp closely in its appearance, color, palatability, taste and flavor, by granulating the fish meat raw material, and shaping the granules with binder meat in the form of a shrimp. CONSTITUTION:Ground meat of fish such as walleye pollack, bonito, sillaginoid, etc. or frozen meat thereof is seasoned, kneaded, shaped to a proper shape, left to stand or heated, cut to a proper size, shaped to granules of 2-10mm., preferably 2-5mm. in diameter, bonded together using a fish paste as a binder, shaped in the form of a shrimp, and steamed to obtain the product. The taste and flavor of shrimp may be added to the product at an arbitrary step of the above process. The product may be mixed with a binder containing ground fish meat, formed to a desired shape, steamed, mixed with a batter, and fried in oil to obtain KAKI-AGE (a kind of tempura; deep-fried small pieces of vegetables and small shrimps in a batter).
