In the chamber, the atmos. is conditioned by circulating an air current which can be cooled or warmed as required. The chamber now has an end compartment provided with two, widely-spaced passages into the chamber space. The compartment has a dividing partition comprising a perforated heat exchanger wall through which the air current can be passed for cooling. The compartment spaces on opposite sides of the partition are in communication with different passages into the chamber space. The end compartment is pref. sepd. from the chamber space by a vertical wall with passages top and bottom. A reversible fan is pref. fitted to one of the passages. Easily controllable, homogeneous atmos. is obtd. throughout chamber space. This ensures optimum fermentation conditions for dough pieces in all parts of the chamber.
