Air conditioning unit for bakery proving chamber - has only one spray humidifier downstream of air cooling heat exchanger

The unit comprises a vertical air duct with intake at the lower end. The top of this riser duct leads inot one end of a horizontal duct which delivers conditioned air at its free end. Fans are installed at the junction between the two ducts and a refrigerating heat exchanger is positioned in the horizontal duct downstream of the fans. The air is further conditioned by a spray humidifer. The humidifier is now located downstream only of the heat exchanger and delivers water from spray jets aligned in opposed sidewalls of the duct. The water is recirculated by a pump from a reservoir in this base panel of the horizontal duct. Downstream of the humidifer, the horizontal duct pref. contains transverse baffle blades to trap entrained droplets.
