PURPOSE:To balance various conditions such as taste, color, hardness, shelf stability, etc. well, and to improve especially taste, by treating again astringent persimmon whose astringency is removed once with an alcohol having =specific vapor pressure. CONSTITUTION:Astringent persimmons whose astringency is removed once in a CO2 atmosphere or mixed atmosphere of CO2 and ethyl alcohol are treated again in the atmosphere having alcohol vapor pressure 1mm.Hg higher than the first treatment for 1-10hr. By the second treatment, astringent persimmons whose astringency is removed, having mild, aromatic, elegant, and sweet taste, showing beautiful orange, hardness almost equal to that before removal of astringency, good hardness to masticate, good shelf stability of about one week, not causing wrinkle, stain, etc. on the surface, are obtained.
