The packaged construction comprises an oil-fired boiler with an interior furnace tube in which the burner delivers heat. The furnace tube is set inside a shell to leave a space between tube and shell to contain must to be heated. Cold must enter the lower part of the liq. space and heated must leaves by an outlet on top of the shell. The outlet passage contains a temp. sensing element which thermostatically controls the burner so that the temp. of delivered must does not exceed a selected limit. An oil storage tank for supplying the burner with fuel is pref. installed beneath the boiler. The boiler is pref. of the type having cross tubes which carry must across the furnace tube, the cross tubes being connected into the liq. space on opposite sides of the furnace tube. The complete packaged assembly is pref. mounted on a wheeled chassis. The boiler is employed for raising the temp. of grape must to assist fermentation in the prodn. of wine. The must is warmed to a predetermined temp. without risk of overheating even when the rate of flow of must falls considerably. Overheating can be harmful when micro-organisms in the must are destroyed by excessive temp.
