Method for manufacturing a powdered product such as powdered milk from a liquid product such as milk, which consists in subjecting the liquid product to a heat treatment such as a pasteurisation or a sterilisation 1, in then subjecting it to concentration by simple- (single-) or multi-effect evaporation 10, 11, then in drying 16 the resulting concentrate by means of air heated to a specific temperature suitable 26 for the drying operations. It is characterised in that, before heating the air to this specific temperature, it is preheated 6 by transferring thereto calories taken from the vapour produced by the pressure reduction 5a of the liquid product which has undergone the heat treatment and is not yet concentrated. The invention relates particularly to the production of powdered milk. IMAGE
