The formation of anthocyanins in fruit and plants, such as apples, grapes, American cranberries and poinsettias, can be promoted by interrupting the dark periods before harvesting with blue as well as red light. The light used has maximum emission peaks around 448nm and 660nm, respectively. Post-harvest, apples in cold store can be exposed continuously to red light.
