A solvent mixture of a hydrocarbon, ethanol and water is utilized for the solid-liquid extraction by a single-step process, of lipids and phenols from sunflower seeds in order to obtain a product with high protein content. The use of 2-phase 3- component mixture enables a high yield to be obtained.
