PURPOSE:A bacterium producing alpha-glycerophosphate oxidase in a specific genus is cultured in an enriched medium containing ascorbic acid or its salt to increase the productivity of alpha-glycerophosphate oxidase markedly. CONSTITUTION:There are bacteria capable of producing alpha-glycerophosphate oxidase (alpha-GPO) in Pediococcus, Streptococcus, Lactobacillus or Leuconostoc. One of them is cultured in a medium containing carbon sources, nitrogen sources; inorganic salts, organic growth promotors along with 1-10g/l of ascorbic acid or its salt. The culture medium is kept neutral in pH and aerobic cultivation such as cultivation with aeration and agitation is effected at 25-32 deg.C for 10-30hr to accumulate alpha-GPO in cell bodies.
