Alcohol was prepd. from uncooked grains using a saccharifying enzyme prepn., a protein-hydrolysing enzyme prepn., and alcoholfermenting yeast cultures. Thus, 2Kg uncooked barley or wheat (590) was added with 4 l underground water, 7.5g enzyme prepn.(I) and 2.5g enzyme prepn. (II) prepd. by culturing Aspergillus usamii and Aspergillus oryzae on wheat bran, respectively, and 30g enzyme prepn. (III) prepd. by culturing Rhizopus miveus. The mixt. was inoculated with 400ml culture broth of Saccharomyces cerevisiae and incubated for 90hr at 28-32 C and 50-75 rpm to give 15.1 wt.% alcohol.
