PURPOSE:To easily obtain molded TOFU having various shapes and patterns, which has heretofore been difficult to prepare as a product, by using both a sucrose fatty acid and a molding auxiliary which can be made into sol in hot water and gelatinized when it is cooled. CONSTITUTION:A retarding coagulant such as preferably glucono delta lactone is added to hot soybean milk in any mold in the presence of 0.05-0.5wt.% based on soybean milk of a sucrose fatty acid ester and 0.01-0.5wt.% based on soybean milk of an edible molding auxiliary such as carrageenan which can be made into sol in hot water and gelatinized when it is cold. In the operation, preferably the coagulant and the sucrose fatty acid ester are added to the soybean milk which has dissolved the molding auxiliary, the soybean milk is then cooled, coagulated and the contents are removed from the mold during coagulating process or after the coagulation.
