PURPOSE:To obtain a soybean food without requiring strong heating for inactivating lipoxygenase, by heating soybeans simultaneously deficient in lipoxygenases L-1 and L-3 at a specific temperature and producing the soybean food. CONSTITUTION:Already obtained soybeans simultaneously deficient in lipoxygenases L-1 and L-3 are used and heated within a temperature and time range to inactivate only one left lipoxygenase L-2. The soybeans are in a state free of the action of lipoxygenase to produce the aimed soybean food. The use of the above-mentioned soybeans simultaneously deficient in the lipoxygenases L-1 and L-3 completely prevents the action of the lipoxygenases without carrying out excessive heat treatment and various processed soybean foods having good flavor can be produced. The energy required for heating can be saved and the processing can be carried out without causing denaturation of protein to enhance the utilization efficiency of the soybean protein.
