The invention relates to a device for processing fish of the genus Carangidae. On the basis of the object, which is to remove the rows of protective scales situated on the sides of the fish of this genus, it is proposed, in the case of a conveyor which conveys the fish by engaging onto their backs, to make the separating device vertically controllable in relation to the path of the fish and to measure the control movement by means of catches of a pressure roller which holds down the conveyor in the region of the separating device.
