The invention relates to a process and device for the production of potable spirits and products obtained using this process and this device. A unit for distilling the marcs 1 supplies with crude spirits buffer 2 from which is withdrawn, at a continuous flow rate, the crude alcohol intended for supplying a distillation unit 3 providing a first conventional methanol removal from the spirits, with separation of the methanol-free product in a tank 3a and volatile components, recovered at the top, in another tank 3b, from where they are then extracted before being diluted to the desired percentage in another distillation unit 4 comprising a distillation flask 4a supplied with spirits, at the bottom of which is recovered the methanol, which is transferred to a storage reservoir 4b, and, at the top of which are recovered, and then condensed, the other components which remained volatile and which are intended to be pooled with the methanol-free alcohol to give a potable spirit of satisfactory quality.
