ABSTRACT OF THE DISCLOSUREA dough guide is used to precisely control thick-ness of an expanding dough extrudate. The extrudate isforced through at least two vertical slots in an extru-sion head, at relatively high pressure and at a tempera-ture at least equal to the boiling temperature of water.The dough guide has three plates. A middle plateis fixed between the slots. Two movable plates aredisposed on opposite sides of each slot from the middleplate. A threaded rod is used to selectively adjust thelocation of each of the movable plates. In alternativeembodiments, any number of slots are used, each havingtwo guides adjacent it. Any or all of the guides may bemade selectively movable. A product called "crispbread" may be made thereby.
